Ingredients
  

  • 16 oz medjool dates
  • 1 cup water

Instructions
 

  • Remove all the pits from your dates. Don't miss this step, or your food processor is gonna hate you!
  • Add all dates to a medium saucepan and add 1 cup of water. Bring to a simmer.

  • Cover and let simmer 5 minutes, then remove from heat and let cool for 15-20 minutes.
  • Add cooked dates to food processor and process until smooth and creamy.

Notes

Alternatively, place in microwave safe dish and microwave for 1-2 minutes.
I did not have success using my blender for this, but depending on the type you have, it could be and option. If you do not have a blender, simply simmer until very soft and mash by hand (it will not be quite as smooth but still equally tasty and usable!).
