French Toast Blender Waffles

These tender waffles have a slightly egg-y taste thanks to nutritional yeast, and don't get me started on the maple syrup and cinnamon...I'll just say 'you're welcome' right now ;)

- 1 can coconut milk
- 1/4 cup maple syrup (or agave)
- 1 banana
- 1 cup oats
- 2 Tbs ground flax
- 2 Tbs baking powder
- 1 Tbs nutritional yeast
- 2 Tbs cornstarch (or arrowroot powder)
- 2 heaping tsp ground cinnamon
- dash sea salt
- 1/2 cup chickpea flour *reserve for last*
Preheat waffle maker per manufacturer instructions.
Add all ingredients (except chickpea flour) to blender and blend about 30 seconds on medium-high until uniform consistency.
Add chickpea flour 1-2 Tbs at a time and pulse to combine.
Allow batter to set about 5 minutes.
Pour directly from blender into waffle iron. I allow them to cook about 1 minute extra after the light on the waffle maker indicates they are done.
Remove gently, as they will be very tender. Allow them to set up for about 5 minutes...or scarf them down! :0)
